Summer is a time for fresh tastes mixed with lighter style fare which also translates to desserts. The pavlova is all that and more. Reportedly named for Anna Pavlova, the famous Russian ballerina, just one taste will have you twirling in place. Pavlova is a meringue cake made of whipped egg whites, sugar and flavorings. It’s crispy and light and a bit chewy and gets along well with all fruits and nuts and is naturally gluten free. Chef Becky was inspired to make pavlova from her favorite British Chef Nigella Larson, along with influences from her international clientele. An added feature is that pavlova aligns with Chef’s sustainable approach to cooking. Chef uses the entire egg, the egg whites for the pavlova and the yolks for the lemon curd which makes this dish continuous with no waste in the kitchen. 

You’ll find Chef Becky’s pavlova typically served in summer with jams, whipped creams and luscious berries for a refreshingly light summer dessert.
